
Hope you're all managing to keep warm and cosy while the winter rages on all around us. I'm really not much of a cold weather fan - grey, rainy days are for lazy days in bed rather than real life, or at least that's how I feel Monday to Friday at around 7am.
But as the winter drags on it gets a bit much constantly moaning about the cold and the rain, so in order to save myself and those around me from my boring, repetitive, inane complaining I thought I'd jot down a few
reasons to celebrate winter... and then
read and repeat them regularly!
- Tap water is the perfect temperature
- It's a great time to try all the red wines you keep wanting to open.
- Stews make perfect winter food and if you use the cheaper cuts of meat best suited to slow cooking - you'll save money as well!
- Soups are the ultimate comfort food, can be cost efficient and very low in fat so can happily schlurrrp your way to health and satiety.
- Eating in is without doubt everyone's favourite past time when the weather is bad, so you get to see all your friends without having to dress up, go out and spend too much cash.

Healthy Low Fat Apple and Oatmeal Muffins
Tempt yourself and satisfy that sweet tooth craving with these high fibre, low-fat muffins. They are moist, easy to make and with only 1.2g fat per muffin pretty guilt-free! We used Sundowner® apples but any sweet apple can be used.
Makes 12
1 1/2 cups (375ml) quick cooking oats
1 1/2 cups (375ml) fresh apple juice
3/4 cup (180ml) sugar
2 tsp (10ml) vanilla extract
1 1/2 cups (375ml) wholemeal flour
2 tsp (10ml) baking powder
2 Sundowner® apples, grated with the skin
1 tsp (5ml) cinnamon
4 egg whites beaten to soft peaks
Apple wedges to garnish (optional)
Preheat oven to 170°C. Soak the oats, apple juice, sugar and vanilla for 30 minutes. Mix in the flours, grated apple and cinnamon. Fold in the egg whites.
Spoon into muffin tins. Top with sliced apple wedges, if desired, and bake for 25 - 30 minutes until muffins are cooked through and golden brown. Allow to cool slightly before serving.
