Think real farm food...

The beautiful new book by Colette Comins - with Russel Wasserfall (Struik, R250) - The Farm Kitchen, very clearly states ‘There is no diet food in the pages that follow' and when you think of real farm food, quite rightly so! This book has an endless supply of utterly delicious recipes and photographs that depict lyrical ‘on the farm' living. Truth be told they make me want to give up all things urban and head for the hills!

On the right are a couple of my favourite perfect-for-winter choices to get the taste buds going...

French Potato Pie

Two winter choices from The Farm Kitchen, a new book by Colette Comins.

450g waxy potatoes (do not peel)
6 spring onions, sliced
2 cloves garlic, peeled and finely chopped
30ml chopped fresh leaf parsley
Salt and freshly ground pepper
2x 400g ready to roll puff pastry
1 large egg, beaten
200ml crème fraiche or double sour cream

Serves 4

Preheat the oven to 230°C (450°F, Gas Mark 8). Slice the potatoes very thinly into a bowl and mix with spring onions, garlic, parsley and some salt and pepper. Roll out the first sheet of pastry on a lightly floured surface and use it to line a 24cm enamel pie dish. Trim the edges and keep off cuts for a design on top of the pie dish. Layer the potato slices in the pastry and cover with the other rolled pastry. Brush with egg wash and, using the off cuts, create a latticework or leaves on the top.

Bake the pie in a hot oven for 15 minutes, and then reduce the heat to 200°C and cook for a further 25 minutes until potatoes are soft. Remove from the oven and carefully lift off the top of the pie. Pour in crème fraiche into the pie, replace the pastry lid and bake for another 8-10 minutes. Serve thick wedges with garden salad.
